Lemon and coconut bliss balls

Lemon and Coconut Balls of Bliss


80 gms desiccated coconut
zest of 1 lemon
a big squeeze of lemon juice (about half a lemon)
1 tsp of vanilla extract
90 gms almonds
40 gms cashews
1 Tbs coconut flour
4 Tbs maple syrup
Pinch of salt
2 Tbs whole buckwheat groats
4 Tbs coconut oil.


  1. add coconut, lemon zest, almonds and cashews to high powered food processor, blender or thermomix and wazz until the consistency of bread crumbs
  2. add remaining ingredients and process until combined and the mixture is sticky (stick enough to roll into table tennis ball sized balls)
  3. roll into balls and store in fridge or freezer.
