Lemon and Coconut Balls of Bliss
80 gms desiccated coconut
zest of 1 lemon
a big squeeze of lemon juice (about half a lemon)
1 tsp of vanilla extract
90 gms almonds
40 gms cashews
1 Tbs coconut flour
4 Tbs maple syrup
Pinch of salt
2 Tbs whole buckwheat groats
4 Tbs coconut oil.
- add coconut, lemon zest, almonds and cashews to high powered food processor, blender or thermomix and wazz until the consistency of bread crumbs
- add remaining ingredients and process until combined and the mixture is sticky (stick enough to roll into table tennis ball sized balls)
- roll into balls and store in fridge or freezer.
