Sweet Potato hummus


1 cup of uncooked chickpeas (soaked overnight and then boiled for aprox 45 mins or until cooked) or a tin of prepared chickpeas
1/2 -1 sweet potato (baked until soft. Aprox 20-30 mins in fan forced oven at 180 degrees celsius)
2 cloves of garlic
juice of 1 1/2 lemons
2 tbs olive oil
Salt to taste
3 sprigs of parsley
1/2 cup of water


add all ingredients into your high speed blender, food processor or thermomix and wazz until smooth (about a minute)
