Turmeric Broth on raw vegetables

Turmeric broth on raw vegetables 


4 cloves of garlic
1 finger of fresh turmeric
1 onion
2 Tbs olive oil
1 large tomato
hand full of celery leaves
few fresh thyme sprigs
1L water
2 Tbs of thermomix stock (or a stock cube of your choice)
200gms coconut cream/milk
1 heaped Tbs of rapadura or coconut sugar (you could use brown sugar instead)
Juice of one lemon or lime


  1. Finely mince garlic and turmeric (if using thermomix use speed 7 for 3 seconds)
  2. Add finely chopped onion (for thermomix speed 5 for 3 seconds)
  3. add olive oil and sauté ingredients until they go translucent (thermomix 3 min/100 degrees/speed 1)
  4. add chopped tomato, finely chopped celery leaves and thyme (thermomix speed 5 for 5 seconds)
  5. add water, coconut cream and stock.
  6. Simmer for 10 mins (thermomix 10 mins/100degrees/ speed 1)
  7. add in sugar and lemon/lime- stir in to combine and desolve
  8. Pour the hot broth over a bowl of chopped raw veggies. I like to include carrot, asian greens, mint, mushrooms, zucchini, shallots, brocholli and peas
  9. Let sit for a few minutes to soften the veggies and cool the broth a little, then enjoy!
